Ingredients
For the Asparagus:
- 4 cloves garlic, minced
- 6 oz asparagus, trimmed and chopped
- 1 tbsp olive oil
- Salt & pepper
For the Lemon Feta Sauce:
- Zest & juice of 1 lemon
- ¼ cup olive oil
- 1 cup crumbled feta (preferably Saputo)
- Salt & pepper
For the Pasta Sauce:
- 3 tbsp butter
- 2 cups heavy cream
- 1 tbsp flour
- 2 tbsp water
- ½ cup chopped parsley
- Salt & pepper
- 400g cooked linguine
Method
- Cook the Pasta:
Boil linguine in salted water until just shy of al dente. Reserve ½ cup of pasta water, then drain. - Prepare the Lemon Feta Sauce:
Whisk lemon zest, juice, and olive oil together. Stir in feta and black pepper until creamy. - Cook Asparagus:
Heat oil in a skillet. Sauté garlic, then asparagus for 5–7 minutes. Remove and set aside. - Make the Hot Sauce:
In the same skillet, melt butter, add cream, and simmer. Stir in flour/water slurry; cook until thickened. Add parsley, salt, and pepper. - Combine:
