Creamy Crock Pot Chicken Marsala

  • 6 boneless, skinless chicken breasts (1.5–2 lbs total)
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1 tsp dried thyme

  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 8 oz mushrooms, sliced

  • 1 cup dry Marsala wine

  • 1/4 cup cornstarch
  • 1/4 cup heavy cream
  • Fresh parsley (for garnish)

👩‍🍳 Instructions

1️⃣ Prep the Chicken

  • Lightly grease a slow cooker
  • Season chicken with garlic powder, basil, thyme, paprika, salt, and pepper

2️⃣ Sear for Flavor

  • Heat olive oil in a skillet over medium-high heat
  • Sear chicken for 3 minutes per side until lightly browned
  • Transfer to slow cooker
  • Add mushrooms and garlic on top

3️⃣ Add the Marsala Wine

  • In the same skillet, pour in Marsala wine
  • Simmer for 1 minute while scraping up browned bits
  • Pour over chicken in slow cooker

4️⃣ Slow Cook

  • Cover and cook:
    • LOW: 4–5 hours
    • HIGH: 2–3 hours
  • Chicken is done at 165°F (74°C)

5️⃣ Thicken the Sauce

  • Remove chicken and set aside
  • Mix water + cornstarch to create a slurry
  • Stir into the sauce
  • Add heavy cream and mix well

6️⃣ Final Cooking

  • Return chicken to slow cooker
  • Cook on HIGH for 20 minutes until sauce thickens
