Creamy Chili Mac – The Ultimate Comfort Food Mashup

Mac & Cheese

  • 2 cups macaroni, uncooked
  • 2 Tbsp butter
  • 2 Tbsp flour
  • ½ cup heavy cream
  • 1 cup milk
  • ½ tsp mustard powder
  • ¼ tsp onion powder
  • ¼ tsp each salt and pepper
  • ½ tsp hot sauce (optional, flavor enhancer)
  • 1 ½ cups cheddar cheese, shredded

For Baking

  • 1 ½ cups cheddar cheese, shredded
  • Fresh parsley for garnish

Step-by-Step Instructions

1. Make the Chili

  1. Cook and crumble ground beef over medium-high heat for 2 minutes.
  2. Add onions, cook 5 minutes until softened. Drain excess grease.
  3. Stir in bell peppers and garlic; cook 4 minutes.
  4. Mix in chili seasoning and tomato paste; cook 1 minute.
  5. Add tomato sauce, diced tomatoes, and broth. Stir well, bring to a boil, then reduce to a gentle simmer.
  6. Simmer partially covered until thickened. Add kidney beans during the last 10 minutes.

2. Make the Creamy Mac & Cheese

  1. Preheat oven to 400°F.
  2. Cook macaroni in salted boiling water until just al dente; drain.
  3. In a large pot, melt butter over medium heat. Whisk in flour; cook 2 minutes.
  4. Slowly whisk in heavy cream, then milk. Bring to a simmer.
  5. Stir in hot sauce, mustard powder, onion powder, salt, and pepper.
  6. Reduce heat to low and add shredded cheese gradually, stirring until smooth.
  7. Fold in the drained macaroni until evenly coated.

3. Combine & Bake

  1. Stir the chili into the mac and cheese. (Add as much or as little as you like.)
  2. Top with remaining shredded cheddar.
  3. Bake uncovered for 5 minutes, until the cheese is melted.
  4. Garnish with fresh parsley and serve warm.
