Creamy Chicken Alfredo Gnocchi

Ingredients:

  • 1 lb chicken breast (pounded to even thickness or cut into cutlets)
  • 2 tbsp olive oil (divided)
  • 1 tsp garlic powder
  • 2 tsp Italian seasoning
  • Salt & pepper to taste
  • 4 tbsp unsalted butter (divided)
  • 2 shallots (thinly sliced)
  • 3 cloves garlic (minced)
  • 3 tbsp flour (gluten-free if needed)
  • 1/2 cup chicken broth
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1 lb uncooked potato gnocchi (gluten-free if needed)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup Parmesan cheese

How to Make Chicken Alfredo Gnocchi:

  1. Preheat Oven: Set oven to 425°F (220°C).
  2. Season & Sear Chicken: Toss the chicken with 1 tbsp olive oil, garlic powder, Italian seasoning, salt, and pepper. Heat remaining 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 8-10 minutes, flipping halfway, until golden brown and cooked to 145°F (it will finish cooking in the oven). Remove from pan and set aside.
  3. Make the Alfredo Sauce: In the same skillet, melt 1 tbsp butter over medium heat. Sauté shallots for 2-3 minutes, then add garlic and cook for another 1-2 minutes. Add remaining 3 tbsp butter, then stir in flour to form a thick paste.
  4. Create the Sauce Base: Gradually whisk in chicken broth, milk, and heavy cream. Cook until the sauce thickens and starts to bubble.
  5. Combine Chicken & Gnocchi: Dice the seared chicken and add it back to the skillet along with uncooked gnocchi. Stir to coat everything in the sauce.
  6. Top with Cheese & Bake: Sprinkle mozzarella and Parmesan cheese over the top. Transfer to the oven and bake for 12-15 minutes, until cheese is melted, bubbly, and golden brown.
  7. Serve: Garnish with cracked black pepper and chopped parsley. Enjoy!
