Instructions

1. Prepare the Base:

  • Heat olive oil in a large pot over medium heat.
  • Add sausage slices and cook until browned, about 5 minutes. Remove and set aside.
  • Sauté onion, carrots, and celery for 5–7 minutes until softened. Stir in garlic and cook 1–2 minutes more.

2. Simmer the Soup:

  • Pour in chicken broth and add white beans, smoked paprika, thyme, and bay leaf.
  • Bring to a boil, then reduce heat and simmer for 20 minutes to let flavors meld.

3. Blend & Finish:

  • Remove bay leaf. Use an immersion blender to puree half of the soup (or blend 2 cups in a blender and return to pot).
  • Stir sausage back in. Add heavy cream if desired and season with salt and pepper.

4. Serve:

  • Ladle into bowls, garnish with fresh parsley, and enjoy with crusty bread or a side salad.
