  • 2 lbs red potatoes, boiled and halved
  • ¼ cup butter
  • 3 Tbsp flour
  • 1 ½ tsp salt
  • ¼ tsp pepper
  • 1 ½ cups milk
  • 1 cup evaporated milk
  • 10 oz frozen peas
  • ½ cup onion, diced
  • 4 slices bacon, cooked and crumbled

Directions:

  1. Preheat the Oven:
    Set your oven to 325°F (165°C) to prepare for baking.
  2. Prepare the Potatoes and Peas:
    After boiling the red potatoes until tender, drain and halve them. Place the halved potatoes in a greased baking dish, then evenly sprinkle the frozen peas and diced onions over the top.
  3. Make the Cream Sauce:
    In a medium saucepan, melt the butter over medium heat. Stir in the flour, salt, and pepper, cooking until the mixture is smooth and bubbling. Gradually whisk in the milk and evaporated milk, stirring constantly until the sauce thickens to your desired consistency.
  4. Assemble the Dish:
    Pour the creamy sauce evenly over the potatoes and peas, ensuring they’re well coated.
  5. Add Bacon:
    Sprinkle the crumbled bacon over the top for added texture and flavor.
  6. Bake:
