Crack Breakfast Casserole

Start your morning right with this Crack Breakfast Casserole—a rich and hearty dish loaded with crispy bacon, shredded cheese, fluffy eggs, and tender hash browns. It’s everything you love about a satisfying breakfast, baked into one easy casserole. Whether you’re hosting a holiday brunch, feeding a crowd, or meal-prepping for the week, this creamy, cheesy, flavor-packed casserole is always a hit.

🥓 Why You’ll Love It:

  • Make-Ahead Friendly: Prep it the night before and bake in the morning.
  • Crowd-Pleasing: Perfect for potlucks, brunches, or family gatherings.
  • Ultra-Comforting: Cream cheese and ranch seasoning bring irresistible flavor.

🍳 Ingredients:

  • 1 (30 oz) bag frozen hash browns, thawed
  • 8 large eggs
  • 1 cup whole milk
  • 1 (8 oz) package cream cheese, softened
  • 1 (1 oz) packet ranch seasoning mix
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 lb bacon, cooked and crumbled
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup green onions, chopped (optional, for garnish)

🔥 Instructions:

1. Preheat Oven
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking dish with butter or nonstick spray.

2. Mix the Eggs
In a large bowl, whisk together the eggs, milk, softened cream cheese, ranch seasoning, garlic powder, onion powder, salt, and pepper until fully combined and creamy.

3. Layer the Casserole
Spread the thawed hash browns evenly in the prepared dish.
Top with half of the bacon, cheddar, and mozzarella cheese.
Pour the egg mixture evenly over the top.
Sprinkle on the remaining cheeses and bacon.

4. Bake & Serve
Bake uncovered for 40–45 minutes, or until the eggs are set and the top is golden and bubbly.
Allow to cool for about 5 minutes, then garnish with chopped green onions, if desired.
Slice and serve warm!

👨‍🍳 Pro Tips:

  • Want to save time? Use precooked bacon or bacon bits.
  • Add some heat: Mix in a pinch of cayenne or red pepper flakes.
  • Make it ahead: Assemble the night before and refrigerate—just bake in the morning.

🧊 Storage:

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave or cover the whole dish with foil and warm in the oven.
