Cozy One Pot Lasagna Soup (Easy Weeknight Comfort Food)

If you ask me, one-pot meals are a lifesaver—especially when you’re feeding a busy family and want something warm, cozy, and delicious on the table fast. This One Pot Lasagna Soup captures everything we love about classic lasagna—tender noodles, rich tomato broth, melty cheese, and savory ground beef—but wraps it all into a simple, comforting bowl that’s perfect for weeknights.

Imagine a flavorful tomato base simmering with garlic, herbs, and perfectly browned beef. Lasagna noodles soften right in the pot while creamy ricotta and gooey mozzarella melt into every bite. It’s hearty, satisfying, and unbelievably easy—exactly what comfort food should be.

This soup warms you from the inside out and feels like a hug in a bowl. Perfect for chilly nights, busy evenings, or anytime you’re craving that classic Italian flavor without the fuss of layering and baking.

Why You’ll Love This Lasagna Soup

• One-pot convenience – Everything cooks in one pot for minimal cleanup.
• Quick weeknight dinner – Ready in under 45 minutes.
• All the classic lasagna flavors – Savory beef, tender pasta, herbs, and melted cheese.
• Family friendly – Loved by kids and adults alike.
• Simple pantry staples – You likely have everything you need already.

Choosing the Best Ground Beef

For the richest flavor and the best texture, use 80/20 or 85/15 ground beef. These blends offer enough fat to stay juicy without making the soup oily. Ground chuck is ideal thanks to its natural tenderness.

Prefer something leaner? 90/10 works too—just add a splash of olive oil when browning.

Tip: Break the beef into small, even pieces so every spoonful gets just the right amount of protein.

Easy Ingredient Swaps

This soup is super flexible! Try these substitutions:

  • Ground beef → Italian sausage, ground turkey, ground chicken
  • Lasagna noodles → Penne, rotini, rigatoni, broken spaghetti
  • Chicken broth → Vegetable or beef broth
  • Frozen spinach → Fresh spinach (3 cups), kale, or omit
  • Heavy cream → Half-and-half, whole milk, or leave out
  • Ricotta → Cottage cheese or a small amount of softened cream cheese

Common Mistakes to Avoid

• Adding noodles too early – They’ll get mushy and fall apart.
• Not browning the beef properly – Spread it out so it browns instead of steams.
• Adding cream too soon – Add cream at the end to prevent curdling.
• No extra broth – Pasta absorbs broth as it cools, so keep some on hand to thin leftovers.

What to Serve With Lasagna Soup

This hearty soup is a full meal, but the right sides make it even better:

  • Garlic bread or garlic knots
  • Crusty baguette or dinner rolls
  • Caesar salad
  • Simple mixed greens with Italian dressing
  • Warm focaccia

For extra indulgence, serve with extra melted mozzarella on top!

How to Store & Reheat

Refrigerate:
Store for up to 4 days. Add a splash of broth when reheating because the pasta will thicken the soup.

Freeze:
Freeze up to 3 months—but leave out the cream until reheating for best texture.

Reheat:
Warm gently on the stovetop or microwave in 1-minute intervals, stirring often. Add ricotta and mozzarella fresh when serving.

Ingredients

For the Soup

  • 1 lb ground beef
  • 3 garlic cloves, minced
  • ½ yellow onion, diced
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp dried basil
  • ½ tsp dried oregano
  • 1 tsp kosher salt (plus more to taste)
  • Freshly ground black pepper
  • 14 oz crushed tomatoes
  • 32 oz chicken broth (more if needed)
  • 1 cup water
  • 2 tsp tomato paste
  • 6 oz lasagna noodles, broken into pieces
  • 1 cup frozen chopped spinach
  • ¼ cup heavy cream

For Serving

  • Ricotta cheese
  • 4 oz mozzarella cheese, sliced
  • Parmesan cheese (optional)

How to Make One Pot Lasagna Soup

Step 1: Brown the Beef

In a large pot over medium-high heat, cook the ground beef until well browned. Break it into crumbles as it cooks. Drain excess grease. If you like deeper flavor, let a few bits crisp before draining.

Step 2: Add Aromatics & Seasonings

Add the garlic, onion, garlic powder, onion powder, basil, oregano, salt, and pepper to the pot. Cook 5 minutes on medium-low until fragrant and the onion softens.

Step 3: Add Tomatoes, Broth & Noodles

Pour in the crushed tomatoes, chicken broth, water, and tomato paste. Stir well.

Break the lasagna noodles into small pieces and add them in.
Bring to a boil, then lower to a simmer. Cover and cook 10 minutes, until the noodles begin to soften.

Step 4: Add Spinach & Cream

Stir in the frozen spinach and heavy cream. Simmer uncovered for 5 minutes until creamy and heated through. Taste and adjust seasoning.

Step 5: Serve with Cheese

Place a slice of mozzarella at the bottom of your bowl. Ladle the hot soup over top so it melts.

Finish with a dollop of ricotta and a sprinkle of Parmesan.
Every bite tastes like cozy, cheesy lasagna!
