Cowboy Caviar, also known as Texas Caviar, is one of my all-time favorite appetizers! It’s fresh, flavorful, and comes together in just 15 minutes. Perfect for parties, game days, or even a light dinner, this colorful dip is always a hit.

What is Cowboy Caviar?

Cowboy Caviar is a vibrant dip made with black-eyed peas, fresh veggies, and a tangy vinaigrette. You can serve it with tortilla chips, as a taco topping, or even as a side salad. The combination of flavors is fresh, hearty, and slightly tangy—making it addictive and versatile!


Ingredients

  • Dressing:
    • 2 tablespoons apple cider vinegar (avoid the organic brand—it can be too strong)
    • 2 teaspoons hot sauce
    • 1 1/2 teaspoons extra virgin olive oil
    • 1 clove garlic, minced
    • Salt and pepper to taste
  • Dip:
    • 1 avocado, ripe but firm, diced
    • 15.8 ounces black-eyed peas, drained and rinsed
    • 11 ounces canned corn, drained
    • 1/4 red onion, finely diced
    • 2 Roma tomatoes, diced
    • 1/2 cup fresh cilantro, chopped

How to Make Cowboy Caviar

  1. Make the Dressing: In a large bowl, whisk together apple cider vinegar, hot sauce, olive oil, and garlic. Season with salt and pepper.
  2. Combine Ingredients: Add the avocado, black-eyed peas, corn, red onion, tomatoes, and cilantro. Gently fold everything together, being careful not to mash the avocado.
  3. Taste & Adjust: Sample the dip and add extra salt, pepper, or hot sauce if desired.
  4. Serve: Pair with tortilla chips, pita chips, or fresh vegetables.

Tips for the Best Cowboy Caviar

  • Avocados: Choose firm avocados with a slight give—they’ll hold their shape better in the dip.
  • Make Ahead: This dip can be made ahead of time. The vinaigrette keeps the avocado from browning, but it’s best served fresh.
  • Substitutions:
    • Swap black-eyed peas for black beans if you prefer.
    • Use grilled corn for added smoky flavor.
    • Leave out cilantro if you or your guests dislike it.
    • Add a diced jalapeño for extra heat.
