Cream Layer:

  • 16 oz low-fat (2%) cottage cheese
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract

Egg Yolk Mixture:

  • 2 large egg yolks
  • 2 tbsp granulated sugar

Whipped Cream:

  • 2 cups heavy cream or whipping cream
  • 2 tbsp granulated sugar (optional, to taste)

Coffee Soak:

  • 1½ cups strong brewed coffee or espresso
  • 2 tbsp granulated sugar
  • ½ tsp vanilla extract

Assembly:

  • Ladyfinger cookies
  • Cocoa powder, for dusting

🍰 How to Make Cottage Cheese Tiramisu

Step 1: Brew the Coffee Mixture

In a shallow bowl, stir together the hot coffee, 2 tablespoons of sugar, and ½ teaspoon of vanilla extract. Let the mixture cool completely.

Step 2: Blend the Cottage Cheese

Add cottage cheese to a food processor and blend until completely smooth. Scrape down the sides as needed for a velvety texture. Add ¼ cup sugar and 1 teaspoon vanilla, then process again until combined. Chill in the fridge while preparing the rest.

Step 3: Make the Egg Yolk Base

Set up a double boiler by placing a heat-safe bowl over a pot of simmering water (without touching the water). In the bowl, whisk egg yolks with 2 tablespoons of sugar for about 8–10 minutes, or until pale, thickened, and smooth. Remove from heat and continue whisking for 1–2 more minutes to cool slightly.

Step 4: Combine Creamy Components

Add the cooled egg mixture into the food processor with the cottage cheese blend and pulse until fully combined.

Step 5: Whip the Cream

In a clean mixing bowl, beat the heavy cream (and optional sugar) until medium-stiff peaks form. Gently fold the whipped cream into the cottage cheese mixture until smooth and airy.

Step 6: Assemble the Tiramisu

Dip ladyfingers quickly into the cooled coffee mixture and layer them in a 9×9 or similar-sized dish. Spread half of the cottage cheese cream mixture on top. Repeat with another layer of soaked ladyfingers and the remaining cream.

Step 7: Chill and Dust

Cover and refrigerate for at least 4 hours (overnight is best). Before serving, dust generously with cocoa powder.
