- 1½ cups strong brewed coffee or espresso
- 2 tablespoons granulated sugar
- ½ teaspoon vanilla extract
For the Cottage Cheese Base
- 16 oz low-fat cottage cheese (2%)
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
For the Egg Yolk Mixture
- 2 large egg yolks
- 2 tablespoons granulated sugar

Instructions
Step 1: Make the Coffee Mixture
In a bowl, stir together the brewed coffee, sugar, and vanilla extract until the sugar is completely dissolved.
Pour the mixture into a shallow dish and allow it to cool while you prepare the filling.
Step 2: Blend the Cottage Cheese
Add the cottage cheese to a food processor and blend on high until completely smooth and creamy, scraping down the sides as needed.
Add the sugar and vanilla extract, then blend again until fully incorporated.
Transfer the mixture to the refrigerator to chill while you prepare the egg yolks.
Step 3: Set Up the Double Boiler
Fill a saucepan with a small amount of water and bring it to a gentle simmer.
Place a heatproof bowl over the saucepan, making sure the bottom of the bowl does not touch the water. This creates a gentle, indirect heat for cooking the egg mixture.
Step 4: Cook the Egg Yolk Mixture
Add the egg yolks and sugar to the bowl over the simmering water.
Whisk continuously for about 8–10 minutes, until the mixture becomes pale, thick, and smooth (no longer grainy).
Remove from heat and continue whisking for another minute or two to cool slightly.
Step 5: Combine the Filling
Add the slightly cooled egg yolk mixture to the chilled cottage cheese mixture.
Blend again until completely smooth and fully combined. The result should be thick, creamy, and silky.
