  • 1 (7 oz) can chipotle peppers in adobo sauce
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup honey
  • 8 cloves garlic
  • 1 bunch cilantro
  • Juice of 1/2 lime

Spices

  • 2 tsp chipotle powder
  • 1 tsp chili powder
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a blender or food processor, combine chipotle peppers, red wine vinegar, honey, olive oil, lime juice, cilantro, garlic, cumin, chili powder, and salt. Blend until smooth.
  2. Place the steak in a large bowl and pour the marinade over it. Reserve 1/4 cup of the marinade for later.
  3. Remove the steak from the marinade, shaking off excess.
  4. Heat a large skillet over high heat with oil. Sear the steak for 3–4 minutes per side.
  5. Remove steak and let it rest briefly, then slice thinly against the grain and cube.
