If you love the bold, smoky flavor of Chipotle® chicken, this homemade version is going to be your new obsession. This easy Copycat Chipotle Chicken recipe delivers all the authentic taste you crave—without any overnight marinating or hard-to-find ingredients. Tender chicken thighs are coated in a zesty chipotle marinade, pan-seared to perfection, and diced into juicy bite-sized pieces.

Skip the long lines and make your favorite Chipotle chicken right at home for tacos, burrito bowls, salads, quesadillas, or meal prep!

⭐ Why You’ll Love This Recipe

  • Restaurant flavor at home—smoky, savory, and a little spicy.
  • No overnight marination needed (just one hour!).
  • Simple ingredients you can find at any grocery store.
  • Perfect for meal prep—stays delicious for days.
  • Versatile—use it for bowls, tacos, nachos, salads, and more.

🥘 Ingredients & Substitutions

Chicken Thighs

Boneless, skinless chicken thighs are the star of this recipe—rich, juicy, and perfect for soaking up flavor.
Prefer a lighter option? Boneless, skinless chicken breasts work too, but the meat won’t be quite as tender.

Chipotle Peppers in Adobo

These peppers provide the signature smoky heat. Find them in the Latin foods aisle.
Heat note: Some brands are spicier than others! Embasa tends to run hot.

Spices

  • Ground coriander
  • Ground cumin
These warm, earthy spices help mimic Chipotle’s signature flavor.

Garlic

Fresh minced garlic adds depth and aroma.

Olive Oil & Kosher Salt

Helps the marinade cling to the chicken and keeps everything juicy.

🌮 How to Serve Chipotle Chicken

Once cooked and diced, you can use this chicken in so many delicious ways:

🌯 Build Your Own Chipotle-Style Burrito Bowl

Layer:

  • Cilantro lime rice
  • Chipotle chicken
  • Fajita veggies
  • Refried or black beans
  • Corn salsa, cheese, pico
  • Guacamole
  • Chipotle honey vinaigrette

🌮 Tacos

Stuff warm tortillas with chicken and your favorite toppings.

🥗 Salads

Add protein-packed flavor to any fresh salad.

🌯 Burritos & Quesadillas

Perfectly juicy chicken for rolling, melting, and grilling.

You can even pair it with my Copycat Chipotle Steak for a double-meat bowl!

🌶️ How to Adjust the Spice Level

Prefer it hotter?

  • Blend the marinade ingredients until smooth (more pepper exposure = more heat).
  • Chop the chipotle peppers finely before adding to the bag.
  • Marinate up to 24 hours—the longer it sits, the spicier it gets.

Prefer milder?
Use 1–2 peppers from the can instead of the whole can.

🧑‍🍳 Can I Cut the Chicken Before Cooking?

It may seem easier, but don’t do it!
Cooking the thighs whole keeps the meat juicy and prevents it from drying out. Once cooked, dice into bite-sized pieces for the perfect Chipotle-style texture.

🥡 Storage Tips

This recipe is perfect for meal prep!

  • Store cooked chicken in an airtight container for 3–4 days.
  • Reheat in the microwave or warm in a skillet for best texture.

Use leftovers for easy lunches, burrito bowls, wraps, or salads throughout the week.
