Cookie Monster Cookies

Ingredients

  • 3 cups (360g) all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup (226g) unsalted butter, softened
  • 1 ¼ cups (267g) brown sugar
  • ¼ cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • Royal blue, electric blue, and violet gel food coloring
  • ⅔ cup (113g) white chocolate chips, divided
  • ⅔ cup chopped mini Chips Ahoy cookies
  • ⅔ cup chopped Oreos

Directions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix dry ingredients. In a medium bowl, whisk together flour, cornstarch, baking soda, and salt.
  3. Cream butter and sugars. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar on medium speed for about 2 minutes until light and fluffy.
  4. Add wet ingredients. Beat in the eggs and vanilla extract until fully combined.
  5. Add color and combine. Slowly add the dry ingredients, mixing on low speed. Before the dough is fully mixed, add generous amounts of royal blue, electric blue, and violet gel food coloring. Mix until a deep blue color is achieved and dough is thick.
  6. Fold in mix-ins. Stir in ⅓ cup each of white chocolate chips, chopped Chips Ahoy, and chopped Oreos.
  7. Form dough balls. Scoop 2-tablespoon portions of dough, roll into balls, and press remaining mix-ins onto the outside of each dough ball.
  8. Bake. Place cookies 2 inches apart on prepared sheets and bake for 10-12 minutes. Edges should be set but centers still soft. Avoid overbaking.
  9. Cool. Let cookies cool on the baking sheet for 15 minutes before transferring to a wire rack.
