Cookie Dough Brownies Recipe

Rich, fudgy brownies topped with creamy chocolate chip cookie dough frosting. These cookie dough brownies are the ultimate dessert mashup! Whether you’re indulging in a sweet treat for yourself or serving up slices at a gathering, this recipe is always a crowd-pleaser.

Why You’ll Love This Recipe

  • Best of both worlds: Deeply chocolatey brownies + soft, creamy cookie dough frosting.
  • No mixer required: Stir it all together by hand while binge-watching your favorite show.
  • Make-ahead friendly: Store in the fridge or freezer for a ready-to-enjoy treat anytime.

Ingredients

Brownies:

  • 3 oz unsweetened chocolate, finely chopped
  • 2 oz semisweet chocolate
  • 14 tbsp unsalted butter
  • 1/2 cup granulated sugar
  • 2/3 cup brown sugar
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 2/3 cup all-purpose flour
  • 2 tbsp cornstarch
  • 1 tsp sea salt
  • 1/4 cup Dutch-processed cocoa powder

Cookie Dough Frosting:

  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup brown sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1 cup all-purpose flour (heat-treated)
  • 4–5 tbsp milk
  • 3/4 cup mini chocolate chips (or to taste)

Instructions

Make the Brownies:

  1. Preheat oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper.
  2. Melt the chocolate and butter together in the microwave (30-second intervals, stirring between each) or over a double boiler.
  3. Stir in both sugars until combined.
  4. Add the eggs and vanilla; whisk vigorously for about 2 minutes.
  5. Sift in flour, cornstarch, salt, and cocoa powder. Mix until fully incorporated.
  6. Pour into prepared pan and smooth the top. Bake for 30–35 minutes, until a toothpick comes out with just a few moist crumbs.
  7. Let cool completely before frosting.

Make the Frosting:

  1. Beat butter and brown sugar until creamy.
  2. Stir in vanilla, salt, and heat-treated flour until combined.
  3. Add milk a tablespoon at a time until the frosting is soft and spreadable.
  4. Fold in the mini chocolate chips.

Assemble:

  1. Spread frosting over completely cooled brownies.
  2. Cut into squares and enjoy!

Tips for Success

  • Heat-treat the flour for the frosting: Bake on a sheet pan at 300°F for 10 minutes, then cool before using.
  • Use room temperature ingredients for smoother mixing.
  • Don’t overbake the brownies—a few moist crumbs on the toothpick means they’re perfect!

Storage

  • Refrigerator: Store frosted brownies in an airtight container in the fridge for up to 5 days.
  • Freezer: Wrap unfrosted brownies tightly and freeze for up to 2 months. Thaw and frost before serving.
