How to Make Classic Beef Stew (Oven Method)

  1. Preheat oven to 325°F.
  2. Prep ingredients: Chop vegetables. Pat beef dry and season with salt and pepper. Toss beef with flour until evenly coated.
  3. Brown the beef: In a Dutch oven over medium heat, heat olive oil. Brown beef in batches for 3–4 minutes on each side. Transfer to a plate.
  4. Sauté aromatics: In the same pot, add onions, garlic, and carrots. Cook for 2–3 minutes until lightly browned.
  5. Deglaze & build flavor: Add beef broth, tomato paste, Worcestershire sauce, potatoes, and bay leaf. Scrape the bottom to lift up any browned bits.

Stovetop Instructions

Follow all steps above but instead of baking:

  1. Add all ingredients to the slow cooker.

  2. Sauté onions, garlic, and carrots in the same skillet. Deglaze with a splash of broth.

Instant Pot Beef Stew Instructions

  1. Use Sauté mode to brown seasoned, floured beef in olive oil. Remove and set aside.
  2. Sauté onions and garlic for 2–3 minutes.
  3. Add broth, scraping the bottom to deglaze.
  4. Stir in tomato paste and Worcestershire sauce.
  5. Add beef back along with carrots, potatoes, and bay leaf.
  6. Pressure Cook on High for 35 minutes. Let pressure naturally release for 10 minutes, then quick release.
  7. To thicken: mix 1 tbsp cornstarch with water and stir into the pot. Use Sauté mode for 5–10 minutes until thickened.
