And this version goes all in—no powdered sugar topping here, just luxurious chocolate ganache poured generously over the entire cake.


Chocolate Cake Roll vs. Chocolate Swiss Roll

You may hear this dessert called a Chocolate Swiss Roll, but technically, it’s different.

  • Chocolate Swiss Roll traditionally has a marshmallow-style filling
  • Chocolate Cake Roll (this recipe) features a rich yet light filling made with whipped cream and cream cheese

Both are delicious, but this filling adds a creamy tang that pairs beautifully with the deep chocolate flavor.


Baking the Perfect Chocolate Cake Roll

Use the Correct Pan Size

A 10 x 15 x 1-inch jelly roll pan is essential.

  • Too small → cake too thick and difficult to roll
  • Too large → cake too thin and dry

Line the Pan Properly

Line with parchment paper, leaving at least a 1-inch overhang on the long sides. This makes lifting the cake out effortless.

Don’t Overbake

Overbaking causes cracks. Bake for 10–12 minutes only, just until:

  • The cake springs back when gently touched
  • A toothpick inserted comes out clean

Rolling the Cake (The Most Important Step)

  2. Loosen the short edges with a knife
  3. Lift the cake out using the parchment paper
  4. While still warm, roll the cake tightly from the short end, parchment and all

Rolling while warm “trains” the cake to hold its shape and prevents cracking later.

Cool completely (about 15 minutes in the fridge), then gently unroll to add the filling.

  • Whipped cream adds lightness
  • Cream cheese adds structure and a subtle tang
  • Powdered sugar and vanilla keep it perfectly balanced

Spread evenly, leaving a small border around the edges, then roll the cake back up (without the parchment). Chill before adding ganache.


Rich Chocolate Ganache Topping

This glossy chocolate ganache takes the cake roll to the next level.

Tips for Perfect Ganache

  • Chop chocolate into small pieces for smooth melting
  • Heat cream until just simmering—never boiling
  • Let chocolate sit in hot cream for 1 minute before stirring
  • Chill ganache slightly so it thickens before pouring

A small amount of corn syrup adds shine, but it’s optional.

Pour the ganache over a cold cake roll, letting it drip naturally down the sides for a stunning finish.
