Why You’ll Love This Recipe

  • Quick and easy: Ready in just 20 minutes
  • Loaded with flavor: Sun-dried tomatoes, garlic, Parmesan, and white wine bring bold, restaurant-quality taste
  • Creamy and comforting: Alfredo sauce clings to every bite of tender, shredded chicken
  • Versatile: Perfect for a weeknight dinner or a cozy date night meal

Ingredients

Pasta & Chicken:

  • 300g (10 oz) fettuccine
  • 2 chicken breasts, halved horizontally
  • 1/2 tsp salt and pepper
  • 2 tbsp (30g) butter, divided
  • 2 garlic cloves, minced

Sauce:

  • 1/2 cup (125ml) dry white wine (or sub chicken broth)
  • 1/2 cup (125ml) chicken stock, low sodium
  • 1 1/4 cups (315ml) heavy cream
  • 3/4 cup (75g) finely shredded Parmesan cheese
  • 100g (3 oz) sun-dried tomato strips
  • 70g (2.5 oz) baby spinach

Garnish:

  • 120g (4 oz) bacon, cooked and crumbled
  • Extra Parmesan
  • Chopped parsley (optional)

Instructions

Step 1: Cook the Pasta

Bring a large pot of salted water to a boil. Cook fettuccine for the time listed on the package minus 1 1/2 minutes. Reserve a mug of pasta water before draining.

Step 2: Cook the Chicken

Season chicken with salt and pepper. In a large skillet over high heat, melt 1 tablespoon butter and cook chicken for 2 minutes per side until golden. Remove, let rest, and shred with forks.

Step 3: Make the Sauce

Lower heat to medium-high. In the same skillet, melt remaining butter and add garlic. Sauté for 30 seconds. Add wine and simmer until reduced. Stir in chicken broth, cream, Parmesan, and sun-dried tomatoes. Simmer for 3-5 minutes until thickened.

Step 4: Combine

Add shredded chicken, cooked pasta, and spinach to the skillet. Toss for 1-2 minutes until the sauce coats the pasta. Add pasta water as needed to loosen sauce.

Step 5: Serve

Serve immediately topped with crumbled bacon, extra Parmesan, and parsley if desired.

Tips for Success

  • Use freshly grated or finely shredded Parmesan for best melting results
  • Flat pastas like fettuccine hold creamy sauces best
  • For a lighter version, use light cream and more pasta water to thicken

Storage

  • Store leftovers in an airtight container in the fridge for up to 3 days
  • Reheat gently in the microwave with a splash of water to loosen the sauce

Creamy Chicken Alfredo Pasta is the kind of recipe that lifts your spirits no matter what kind of day you’ve had. Whether you’re craving comfort or celebrating something special, this dish delivers everything you want in a rich, satisfying meal.
