Ingredients:

  • Pulled chicken from a rotisserie chicken (no skin)
  • 1 stick of butter, melted
  • 1 cup milk
  • 1 cup self-rising flour (essential for proper rise)
  • 2 cups chicken broth
  • 1 can condensed cream of chicken soup
  • Salt and pepper, to taste

Directions:

  1. Preheat the Oven: Set your oven to 375°F (190°C).
  2. Layer the Chicken: Spread the pulled chicken evenly across the bottom of a 9×13-inch baking dish. Drizzle the melted butter over the chicken, and season with a bit of salt and pepper.
  3. Create the Dumpling Layer: In a bowl, whisk the self-rising flour and milk until smooth. Pour this mixture evenly over the chicken without stirring.
  4. Mix the Broth: In the same bowl, combine the chicken broth and condensed cream of chicken soup. Pour this over the flour mixture—again, do not stir.
  5. Bake: Place the dish in the oven and bake uncovered for 45 minutes until the dumplings rise and turn golden.
  6. Rest and Serve: Let the casserole sit for 5 minutes before serving to allow the dumplings to finish forming. Enjoy warm!
