Cheesy Burrata Crostini with Prosciutto and Peaches

Ingredients

  • 1 loaf sourdough or French baguette, sliced
  • ⅓ cup grated Parmesan cheese
  • ⅓ cup grated Pecorino cheese
  • 1 clove garlic, finely grated
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons melted butter
  • 4 ounces prosciutto
  • 8 ounces burrata cheese, at room temperature
  • 2 ripe peaches, thinly sliced
  • Hot honey, for drizzling
  • Fresh basil leaves, for garnish

Instructions

1. Preheat the Oven

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

2. Make the Cheesy Base

In a bowl, mix together the Parmesan, Pecorino, grated garlic, fresh thyme, melted butter, and a pinch of black pepper. Spread this mixture evenly over the lined baking sheet.

3. Layer the Bread

Place your sliced bread directly on top of the cheese mixture. Lightly brush the tops with more melted butter. Drape or nestle slices of prosciutto either directly on top of the bread or around it for added crispiness.

4. Bake

Bake for 15–20 minutes, or until the bread is golden and crisp, the cheese is bubbling, and the prosciutto is crispy.

5. Assemble the Crostini

Once baked, transfer the cheesy crostini to a platter. Tear the burrata open and generously spoon it over the warm bread. Add peach slices and crispy prosciutto on top, and finish with a few fresh basil leaves.

6. Finish with Hot Honey

Just before serving, drizzle everything with hot honey for the perfect sweet-and-savory finish.


Serving Tip

These crostini are best served warm but are still incredibly delicious at room temperature—perfect for parties and casual get-togethers.
