Cheesecake Tacos

These Mini Strawberry Cheesecake Tacos feature a crispy graham cracker-coated shell, a rich and creamy cheesecake filling, and a sweet strawberry glaze topping. Perfect bite-sized treats for any dessert lover!

For the Shells:

  • 7 (9-inch) tortilla shells
  • 1 cup graham cracker crumbs
  • 1 ½ tablespoons granulated sugar
  • ⅓ cup butter, melted

For the Cheesecake Filling:

  • 8 ounces cream cheese, at room temperature
  • 3 tablespoons cheesecake-flavored instant pudding mix
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

For the Topping:

  • ½ cup fresh strawberries, chopped
  • ¾ cup strawberry glaze (or substitute with strawberry pie filling)

Instructions:

1. Make the Shells:

  • Preheat the oven to 400°F (200°C).
  • In a shallow dish, combine the graham cracker crumbs and sugar.
  • Use a 3¾-inch round cookie cutter to cut 3 circles from each tortilla.
  • Pierce each circle 6-7 times with a fork to prevent bubbles.
  • Brush both sides of each circle with melted butter, then press into the graham cracker mixture to coat.
  • Fold each shell in half to form a taco shape. Place them between the cups of an upside-down cupcake pan.
  • Bake for 11 minutes until golden and crisp. Let them cool completely in the pan to hold their shape.

2. Prepare the Cheesecake Filling:

  • In a large bowl, beat the cream cheese until smooth.
  • Add the pudding mix, ½ cup of the heavy cream, powdered sugar, and vanilla extract. Beat until combined.
  • Add the remaining heavy cream and whip until the mixture is smooth and fluffy.
  • Transfer the filling to a piping bag fitted with a Wilton 1M tip, and pipe the cheesecake filling into the cooled taco shells.

3. Add the Topping:

  • In a small bowl, mix the chopped strawberries with the strawberry glaze.
  • Spoon the strawberry mixture over the cheesecake filling.

4. Serve and Enjoy!
