Cauliflower Tortillas

You might be surprised by this recipe, but today I’m going to teach you how to make Cauliflower Tortillas! Yes, you read that right – tortillas made from cauliflower! These healthy, low-carb tortillas are a great alternative to traditional ones, and they’re easy to whip up at home.

Follow along with the quick video tutorial, then grab the full recipe below to make your own delicious cauliflower tortillas!

Ingredients:

  • ¾ large head of cauliflower (about 2 cups, riced)
  • 2 large eggs (use flax eggs for a vegan option)
  • ¼ cup chopped fresh cilantro
  • ½ medium lime, juiced and zested
  • Salt & pepper, to taste

Instructions:

  1. Preheat your oven to 375℉ and line a baking sheet with parchment paper.
  2. Trim and chop the cauliflower into small, even pieces. Pulse in a food processor until the texture resembles couscous (about 2 cups packed).
  3. Microwave the riced cauliflower for 2 minutes, stir, then microwave for another 2 minutes. Alternatively, steam until soft. Once cooked, place the cauliflower in a cheesecloth or thin towel and squeeze out as much liquid as possible.
  4. In a bowl, whisk the eggs, then add the cauliflower, cilantro, lime juice and zest, salt, and pepper. Mix well.
  5. Shape the mixture into 6 small tortillas on the prepared baking sheet. Bake for 10 minutes, then flip and bake for another 5-7 minutes until firm.
  6. Let the tortillas cool slightly on a wire rack. Heat a skillet over medium heat, then brown each tortilla for 1-2 minutes on each side. Enjoy!
