You might be surprised, but today I’m going to show you how to make tortillas using cauliflower… that’s right, these are Cauliflower Tortillas!

Ingredients:
- ¾ large head cauliflower (or 2 cups riced cauliflower)
- 2 large eggs (substitute flax eggs for a vegan option)
- ¼ cup chopped fresh cilantro
- ½ medium lime, juiced and zested
- Salt and pepper, to taste
Instructions:
- Preheat your oven to 375°F and line a baking sheet with parchment paper.
- Trim the cauliflower, cut it into small, uniform pieces, and pulse it in a food processor in batches until you achieve a couscous-like consistency. You should have about 2 cups packed of finely riced cauliflower.
- Place the riced cauliflower in a microwave-safe bowl and microwave for 2 minutes. Stir, then microwave for another 2 minutes. Alternatively, you can steam the cauliflower if you prefer.
- Transfer the cooked cauliflower to a fine cheesecloth or a thin dish towel and squeeze out as much liquid as possible. Be cautious as it will be hot; using dishwashing gloves is recommended to avoid burns.
- In a medium bowl, whisk the eggs, then add the cauliflower, cilantro, lime juice, lime zest, salt, and pepper. Mix until well combined. Shape the mixture into 6 small “tortillas” on the prepared parchment paper.
- Bake for 10 minutes, then carefully flip each tortilla and return to the oven for an additional 5 to 7 minutes, or until they are fully set. Transfer the tortillas to a wire rack to cool slightly.
- Heat a medium-sized skillet over medium heat. Place a baked tortilla in the pan, pressing down slightly, and brown for 1 to 2 minutes on each side. Repeat with the remaining tortillas.
Notes:
- These tortillas can be enjoyed on their own, used to make quesadillas, or filled with your favorite taco ingredients.
- Many users have reported success using pre-riced cauliflower instead of processing a whole head.
- Leftover tortillas freeze well for later use.
