  • 1 small to medium head of cauliflower (should yield about 2 cups once processed)

  • 1/2 teaspoon dried basil

  • 1/4 teaspoon dried oregano

  • 1 teaspoon garlic salt OR 1/4 teaspoon salt and 1/4 teaspoon garlic powder

  • 1/3 cup shredded Parmesan cheese

  • 1/3 cup mozzarella cheese

  • 1 egg

  • Pizza sauce and toppings of your choice

Directions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper, lightly spraying it with cooking spray.
  • Pulse the raw cauliflower in a blender until it reaches a fine, rice-like texture. Transfer to a microwave-safe bowl and microwave for 4 minutes. Once cooled, wrap the cauliflower in cheesecloth or a clean kitchen towel and squeeze out as much liquid as possible. The drier the cauliflower, the crispier your crust will be.
  • In a large mixing bowl, combine the cauliflower, egg, Parmesan, mozzarella, salt, and spices. Mix thoroughly to form a dough.
  • Shape the dough into a ball, then place it on the prepared baking sheet. Roll it out with a rolling pin to about 0.2 inches thick.
  • Bake the crust for 20-25 minutes, until it’s golden and firm. Optionally, flip the crust halfway through for even baking, but this step isn’t necessary.
  • Once baked, spread your favorite pizza sauce over the crust, add shredded cheese, and any toppings of your choice.
  • Return to the oven and bake until the cheese is fully melted and bubbly.
