Butter Swim Biscuits — Buttermilk Biscuits Baked in Butter!

This recipe comes from Simply Texas Butter Swim Biscuits, passed down from grandma’s kitchen — so you know it’s a keeper! It’s easy to make with simple ingredients you probably already have, with just buttermilk as the only special ingredient (and if you don’t have any, you can easily make your own homemade buttermilk).

Ingredients for Butter Swim Biscuits

  • 2 ½ cups (312.5 g) all-purpose flour
  • 4 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 2 teaspoons kosher salt
  • 2 cups (490 g) buttermilk
  • ½ cup (1 stick or 113 g) unsalted butter, melted

How to Make Butter Swim Biscuits

  1. Preheat your oven to 450°F (232°C).
  2. In a medium bowl, whisk together flour, baking powder, sugar, and salt to evenly combine and sift the dry ingredients.
  3. Pour in the buttermilk and gently stir until the dough just comes together—be careful not to overmix to keep the biscuits tender.
  4. Pour the melted butter into an 8×8-inch baking dish.
  5. Transfer the dough on top of the butter and use a spatula or your hands to spread it evenly all the way to the edges.
  6. Using a knife or bench scraper, cut the dough into 9 equal squares (3×3 grid).
  7. Bake for about 28 minutes, or until the tops are golden brown and the biscuits are cooked through.
