Buffalo Chicken Egg Rolls

Ingredients

  • 2 cups (280 g) rotisserie chicken, finely diced
  • 4 oz cream cheese, softened

  • 1 cup (113 g) mozzarella cheese, shredded
  • 1 packet (1 oz / 2 tbsp) dry ranch seasoning mix
  • 8 egg roll wrappers

Instructions

  1. Prepare Filling: In a large bowl, combine chicken, cream cheese, buffalo sauce, cheddar, mozzarella, and ranch seasoning until smooth and well mixed.
  2. Assemble Egg Rolls:
    • Work with one wrapper at a time. Place about ⅓ cup of filling in the center.
    • Moisten edges of the wrapper with water. Fold the bottom corner over the filling, then fold in the sides and roll tightly, sealing all edges.
  3. Cook Options:
    Air Fryer:
    • Preheat to 400°F.
    • Place egg rolls in the basket (in batches if needed), spray tops with cooking spray.
    • Air fry 3-4 minutes, flip, spray again, and cook another 3-4 minutes until golden and crispy.
    Oven:
    • Preheat to 400°F. Line a baking sheet with parchment paper.

    Deep Fry:
