Enjoy the perfect combination of creamy brie, sweet figs, and crisp Fillo Pastry with this irresistible bake! With layers of flaky pastry, melted cheese, and fresh thyme, this dish is a showstopper for any occasion.
Ingredients
- 375g Fillo Pastry
- 150g unsalted butter, melted
- 2 eggs
- 1 cup thickened cream
- Salt & pepper, to taste
- 500g double brie cheese, sliced
- 6 fresh figs, thinly sliced
- 3 sprigs fresh thyme
Tip: This recipe uses a 24cm x 34cm rectangular baking pan, but feel free to use any shape you prefer!
Method
- Prepare the Fillo Pastry: Take the Fillo Pastry out of the fridge in its plastic wrap, letting it reach room temperature.
- Preheat & Prep: Preheat the oven to 180°C fan-forced. Brush a 24cm x 34cm baking pan with melted butter.
- Egg & Cream Mixture: In a mixing jug, whisk together eggs, cream, salt, and pepper until well combined. Set aside.
- Layer the Pastry: Place two sheets of Fillo on your workspace, aligning the short sides toward you. Fold into a concertina shape with your fingers, then transfer to the prepared pan. Repeat with the remaining Fillo until the pan is filled.
- Assemble the Bake: Drizzle melted butter over the Fillo with a pastry brush. Nestle slices of brie and figs between the pastry layers. Pour the egg and cream mixture evenly over the pastry. Top with fresh thyme.
- Bake: Place in the oven and bake for 35 minutes or until golden and crispy. Serve immediately and enjoy!
