For the Pie Crust:

  • 1 cup all-purpose flour
  • 4 oz (½ cup) butter, softened
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

For the Strawberry Filling:

  • 1 cup water
  • ¾ cup granulated sugar
  • ¼ teaspoon salt
  • 2 tablespoons cornstarch
  • ¼ teaspoon red food coloring
  • 1 quart fresh strawberries, rinsed, stemmed, and patted dry

For Serving:

  • 1 pint whipped cream or whipped topping

👩‍🍳 How to Make Big Boy’s Fresh Strawberry Pie

1. Make the Pie Crust:

Preheat your oven to 350°F (175°C). In a mixing bowl, combine flour, softened butter, powdered sugar, and vanilla extract. Mix until well combined.

Press the mixture evenly into the bottom and up the sides of a 9-inch pie pan. Prick the crust with a fork to prevent puffing.

Bake for 10 to 15 minutes, or until lightly golden brown. Remove from the oven and allow it to cool completely before adding the filling.

2. Prepare the Strawberry Glaze:

While the crust bakes, whisk together water, granulated sugar, salt, cornstarch, and red food coloring in a small saucepan.

Cook over medium heat, stirring constantly, for about 5 minutes or until the glaze thickens. Remove from heat and let it cool to room temperature.

3. Assemble the Pie:

Once the crust is cool, arrange the whole strawberries inside the pie shell.

Carefully pour the cooled glaze over the strawberries, making sure to coat them evenly.

Chill the pie in the refrigerator until the glaze is set—about 2 to 3 hours.

4. Serve:

Just before serving, top each slice with a generous swirl of whipped cream or a scoop of whipped topping. Slice and enjoy!
