Bananas Foster Bread Pudding

Ingredients

  • Bread Pudding:
    • 16-ounce loaf challah bread, cut into 1-inch cubes
    • 4 cups milk
    • 5 large eggs
    • 1 teaspoon cinnamon
    • 1 teaspoon vanilla extract
    • ½ cup sugar
  • Bananas Foster Sauce:
    • ½ cup butter
    • 1 ½ cups packed brown sugar
    • 1 teaspoon cinnamon
    • ¼ teaspoon nutmeg
    • ⅛ teaspoon ground cloves
    • ½ teaspoon rum extract
    • ½ cup heavy cream
    • 3 bananas, sliced

Instructions

  1. Prepare the Custard
    In a large mixing bowl, whisk together the eggs, milk, sugar, cinnamon, and vanilla extract until smooth and well combined.
  2. Combine Bread with Custard
    Add the cubed challah bread to the custard mixture, stirring to fully coat each piece. Cover and place the bowl in the refrigerator for 1 hour, allowing the bread to absorb the custard.
  3. Bake the Bread Pudding
    Preheat the oven to 350°F (175°C). Grease an 11×7 baking dish with non-stick cooking spray. Pour the soaked bread and any remaining custard into the prepared baking dish, spreading it evenly. Cover the dish with foil and bake for 55-60 minutes, or until a knife inserted into the center comes out clean. Remove from the oven and let it cool slightly while you prepare the sauce.
  4. Make the Bananas Foster Sauce
    In a medium skillet over medium heat, melt the butter. Add the brown sugar, cinnamon, nutmeg, and cloves, stirring constantly until the sugar dissolves and the mixture is smooth and bubbly. Slowly pour in the heavy cream, stirring continuously to combine.
  5. Add Bananas and Flavor
    Stir in the sliced bananas and rum extract, and cook for another 2-3 minutes, allowing the bananas to soften slightly.
  6. Serve
    Pour the warm bananas foster sauce over the baked bread pudding. For an extra touch, top each serving with a scoop of vanilla ice cream.

Tips

  • For best results, use day-old challah bread to absorb more custard and hold its texture while baking.
  • To achieve a golden, caramelized crust, uncover the bread pudding for the last 5-10 minutes of baking.
