Apple Pie Enchiladas

Ingredients

  • Homemade apple pie filling, or 1 (21-ounce) can of apple pie filling
  • 6 (8-inch) flour tortillas
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup water

Instructions

  1. Preheat Oven: Set oven to 350°F (175°C) and butter a 9×13-inch baking dish.
  2. Prepare Tortillas: Microwave tortillas for a few seconds if needed to soften them for easier rolling.
  3. Fill and Roll: Spoon about 1/4 cup of apple pie filling slightly off-center in each tortilla, then sprinkle with cinnamon. Roll up the tortillas and place them seam-side down in the prepared baking dish.
  4. Make the Sauce: In a medium saucepan, combine butter, white sugar, brown sugar, and water. Bring to a boil, then reduce heat and simmer for 3 minutes, stirring constantly.
  5. Assemble: Pour the sauce over the rolled enchiladas. Sprinkle with extra cinnamon if desired, and let the dish sit for 45 minutes to absorb the sauce.
  6. Bake: Bake in the preheated oven for 20 minutes, or until the tortillas are golden and bubbling.

Serving Suggestions

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, and drizzle with caramel sauce for an extra indulgent treat!
