Ingredients

For the Crust

  • 2 pre-made, ready-to-roll pie crusts (or homemade all-butter pie crust)

Apple Filling

  • 2 tablespoons unsalted butter
  • 2 large apples, peeled, cored, and diced into ¼-inch cubes
  • 2 tablespoons brown sugar
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon salt
  • 2 tablespoons lemon juice

Crumble Topping

  • 2 tablespoons unsalted butter
  • ⅓ cup flour
  • ⅓ cup brown sugar
  • ⅓ cup pecan halves, toasted
  • ⅛ teaspoon salt

Additional

  • 1 egg, beaten (for egg wash)
  • Whipped cream, ice cream, or caramel sauce for serving

Instructions

  1. Preheat Oven: Set the oven to 350°F and lightly spray a 24-cup mini muffin pan with cooking spray.
  2. Prepare the Apple Filling: In a medium saucepan, melt butter over medium-high heat. Add apples, brown sugar, cinnamon, and salt. Cook, stirring often, until apples are tender (about 10-12 minutes). Stir in lemon juice and set aside to cool.
  3. Make the Crumble Topping: In a medium bowl, combine flour, brown sugar, pecans, and salt. Add the butter and mix with a fork until crumbly.
  4. Prepare the Crust: Roll out the pie crust on a floured surface with a floured rolling pin. Use a 3-inch round cookie cutter to cut at least 24 circles (about 12 circles per crust). Gently press each round into the muffin pan, shaping the edges like a pie crust. Brush the edges with egg wash.
  5. Assemble the Cupcakes: Spoon the apple filling into each crust, then top with crumble.
  6. Bake: Bake for 15-20 minutes, until the crust edges are golden brown. Remove from the oven and let cool on a rack. Use a knife tip to gently release each cupcake from the pan.
  7. Serve: Top with whipped cream, ice cream, or a drizzle of caramel sauce for a perfect mini apple pie experience!
