Apple Pecan Cake With Caramel

Ingredients

For the Cake:

  • 1½ cups cooking oil
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 3½ cups Granny Smith apples, peeled and finely chopped (about 3-4 apples)
  • 1 cup finely chopped pecans

For the Caramel Glaze:

  • ¾ cup unsalted butter (1½ sticks)
  • 1 cup light brown sugar
  • ¼ cup whole milk
  • 1 teaspoon vanilla extract

Instructions

1. Preheat and Prepare the Pan:

  • Preheat your oven to 325°F (163°C). Grease and flour a tube pan or two loaf pans to ensure easy removal after baking.

2. Mix the Batter:

  • In a large mixing bowl, combine the cooking oil, granulated sugar, and eggs. Beat until creamy and smooth.
  • In a separate bowl, sift together the flour, baking soda, cinnamon, and salt. Gradually add this mixture to the wet ingredients, mixing just until combined.

3. Add Flavorings and Ingredients:

  • Stir in the vanilla extract. Fold in the chopped apples and pecans until evenly distributed throughout the batter.

4. Bake the Cake:

  • Pour the batter into the prepared pan(s). Bake for about 1 hour. At the 50-minute mark, check doneness by inserting a toothpick into the center; if it comes out clean, the cake is ready.

5. Prepare the Caramel Glaze:

  • While the cake cools, melt the butter in a small saucepan over low heat. Stir in the brown sugar and milk, bringing it to a boil. Reduce to a simmer and stir constantly for about 10 minutes until slightly thickened. Remove from heat and mix in the vanilla extract.

6. Finish with Caramel Glaze:

  • Once the cake has cooled slightly and the glaze is pourable, drizzle the caramel glaze over the top, allowing it to cascade down the sides for a beautiful finish.
