Alice Springs Chicken

Ingredients

  • For the Chicken:
    • 4 chicken breasts (horizontally sliced in half)
    • 6 slices of cooked bacon
    • 2 cups Monterey Jack cheese
  • For the Honey Mustard Sauce:
    • 1/3 cup mayo
    • 1 Tbsp honey
    • 2 tsp stone-ground mustard

Instructions

  1. Prepare the Chicken: Season both sides of the chicken breasts with salt, pepper, and paprika. Heat a few tablespoons of oil in a non-stick pan, and brown the chicken on both sides. Transfer the chicken to a 9×13 baking dish.
  2. Make the Honey Mustard Sauce: In a small bowl, combine the mayo, honey, and stone-ground mustard. Mix until smooth.
  3. Assemble the Chicken: Spread the honey mustard sauce generously over each chicken breast. Top each with a slice of bacon and a handful of Monterey Jack cheese.
  4. Bake: Bake the chicken at 350°F for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  5. Serve: Serve with additional honey mustard sauce on the side for dipping.

Optional Additions:

  • Mushrooms: If you love mushrooms, sauté 1 cup of white button mushrooms in 1 tbsp of oil and add them on top of the chicken before baking. You can also use a small can of drained mushrooms for a quicker option.

Quick Meat Tenderizer (Optional):

For ultra-tender chicken, marinate the breasts with a quick tenderizer: mix 1 1/2 tsp of baking soda, 2 tbsp vinegar, and 1 tsp salt. Add cold water to cover the chicken and let it sit for 20 minutes before cooking.
