A Lemon Cake to Die For

Ingredients: For the Cake:

  • 1 box yellow cake mix
  • 1 small box instant lemon pudding mix
  • ¾ cup oil
  • ¾ cup water
  • 4 beaten eggs

For the Glaze:

  • 2 cups powdered sugar
  • 2 tablespoons melted butter
  • 2 tablespoons water
  • ⅓ cup lemon juice

Instructions:

  1. Preheat the Oven: Heat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Mix the Cake Batter: In a large bowl, mix the beaten eggs, cake mix, pudding mix, oil, and water until smooth.
  3. Bake: Pour the batter into the prepared pan and bake for 30-35 minutes until golden and a toothpick comes out clean.
  4. Prepare the Glaze: While the cake bakes, whisk together powdered sugar, melted butter, water, and lemon juice until smooth.
  5. Glaze the Cake: Poke holes in the warm cake with a wooden spoon handle, then pour the glaze over the cake, letting it seep into the holes.
  6. Serve: Let the glaze set before slicing. Enjoy on its own or with whipped cream or ice cream!
