Nutella-Stuffed Pancakes

Ingredients:
- 10 to 14 tablespoons Nutella®
- Pancake Batter:
- 1 ½ cups all-purpose flour
- 3 tablespoons granulated sugar
- 1 tablespoon baking powder
- ¼ teaspoon kosher salt
- 1 egg
- 1 teaspoon pure vanilla extract
- 1 cup milk
Directions:
- Prepare Nutella Discs:
Line a baking sheet with parchment paper. Spoon 1 ½ tablespoons of Nutella® onto the prepared sheet, spreading each into a round disc about 2 ½ inches in diameter. Repeat to create 7 to 8 discs. Freeze for 15-20 minutes, until firm. - Make Pancake Batter:
In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Add the egg, vanilla extract, and milk. Stir until fully combined and smooth. - Cook Pancakes:
Preheat a griddle or large skillet over medium-low heat and lightly spray with non-stick spray. Pour ¼ cup of pancake batter onto the griddle. Place a frozen Nutella® disc in the center of the batter, then cover the disc with additional batter. When bubbles appear on the surface of the pancake, flip and cook for another 1-2 minutes until golden brown. - Serve:
Keep the pancakes warm while you cook the remaining batches. Serve warm and enjoy the surprise Nutella® center!
