No-Bake Peanut Butter Oat Cups
These delicious no-bake peanut butter oat cups feature a creamy peanut butter oat base topped with smooth, melted chocolate. They’re an easy and satisfying treat your whole family will love!
Ingredients:
- 1.5 cups peanut butter
- 1.5 cups oat flour (made by processing rolled oats in a food processor)
- 1/4 cup maple syrup
- 1 cup chocolate chips
- 1 tsp coconut oil (optional)
Instructions:
- In a microwave-safe bowl, combine peanut butter and maple syrup. Microwave for 40-60 seconds, then stir until fully blended.
- Gradually add the oat flour to the mixture, stirring until a thick, moldable dough forms. If the mixture is too dry, add a bit more peanut butter or maple syrup (a teaspoon at a time).
- Line a muffin pan with cupcake liners or use a silicone muffin pan for easier removal. Evenly distribute the peanut butter oat mixture into each cup and press it down with your fingers.
- In another microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring in between, until smooth.
- Pour the melted chocolate over each peanut butter oat cup, smoothing the top with the back of a spoon. Optional: Add flaky salt, sprinkles, or mini chocolate chips before the chocolate hardens.
- Refrigerate for 2-3 hours until set. Carefully remove the cups from the pan and store them in an airtight container in the fridge for up to 5 days.
