Ingredients:
- 2 medium sweet potatoes
- 1 teaspoon olive oil
- 1 ¼ teaspoons ground cumin (divided)
- ¼ + ⅛ teaspoon salt
- ¼ + ⅛ teaspoon ground pepper
- ¾ lb lean ground turkey (93%)
- 4 garlic cloves, minced
- 1 teaspoon chili powder
- ½ teaspoon dried oregano
- ½ teaspoon paprika
- 1 ¼ cups canned crushed tomatoes
- ¼ cup grated pepper jack cheese
- 2 tablespoons minced flat-leaf parsley
Instructions:
- Pierce the sweet potatoes with a fork and microwave on HIGH for 4-5 minutes per side until tender. Let cool slightly.
- Cut each potato in half lengthwise and carefully scoop out the flesh into a bowl, reserving the skins. Mash the sweet potato with olive oil, ½ teaspoon cumin, ¼ teaspoon salt, and ¼ teaspoon pepper. Stuff the mashed mixture back into the potato skins and place them on a baking sheet.
- Heat a nonstick skillet over medium-high heat. Coat lightly with cooking spray. Add ground turkey and cook until fully browned, breaking it up with a wooden spoon. Stir in garlic, chili powder, ¾ teaspoon cumin, oregano, paprika, and remaining salt and pepper. Cook for 1 minute, then stir in crushed tomatoes.
- Preheat the broiler. Fill each sweet potato skin with the turkey mixture and top with grated cheese. Broil for about 30 seconds until the cheese melts.
