This low-carb Chicken Caesar Salad offers all the classic Caesar flavors while being keto-friendly! It features crisp Romaine lettuce, tender chicken, crunchy parmesan crisps, and a rich, homemade Keto Caesar dressing.
Ingredients:
- Low Carb Chicken Caesar Salad
- 1 lb Chicken Breasts
- Salt and pepper, to taste
- 6 cups Romaine Lettuce
- 1/4 cup parmesan cheese
- 1/2 cup parmesan crisps
- Low Carb Caesar Dressing
- 3/4 cup mayonnaise
- 1/2 cup grated parmesan cheese
- 4 Anchovy filets (1 oz) in olive oil
- 4 cloves garlic, minced
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/4 tsp black pepper
- Pinch of salt
Instructions:
Make the Low Carb Caesar Dressing:
- Combine all dressing ingredients in a blender and pulse until smooth. Transfer to a container and refrigerate until ready to use.
Make the Chicken Caesar Salad:
- Prepare the dressing as outlined.
- Heat a medium pan over medium heat. Slice the chicken breasts in half to create two thinner pieces.
- Pat the chicken dry and season with salt and pepper. Cook until golden brown and internal temperature reaches 165°F.
- In a large bowl, combine Romaine lettuce, parmesan, and crisps. Toss with the prepared dressing until the lettuce is evenly coated.
