  • 8 oz (250g) cooked chicken breast, shredded
  • 2 ½ cups cauliflower florets
  • 1 medium carrot, chopped
  • 1 ½ tbsp fresh ginger, grated
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • ½ tsp turmeric
  • ½ tsp black pepper
  • 1 tsp dried mint
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 cups chicken broth (or water)

Pro Tip: If you have cilantro or lime leaves, toss them in for an extra burst of flavor. But if not, don’t stress—it’s still delicious without!


How to Make This Cauliflower Chicken Soup:

  1. Prepare the chicken first
    You can do this ahead of time. Boil two chicken breasts with a pinch of salt in a pot of water. Once cooked, set aside and save that chicken broth. You’ll need it in a bit!
  2. Shred the chicken
    Once your chicken has cooled down, use two forks to shred it. Trust me, there’s no need for a food processor here. Just take your time and shred it by hand—it’s a good way to keep your zen.
  3. Chop and prep the veggies
    Get ready to chop! You’ll dice the onion, mince the garlic, chop the cauliflower into small pieces, and peel and chop the carrot into bite-sized pieces. Don’t forget to grate the fresh ginger! It smells amazing.

    Heat a tablespoon of olive oil in a pot, then toss in the onions, garlic, turmeric, and black pepper. Sauté for about 2-3 minutes until everything becomes fragrant.
  5. Add the cauliflower and broth
    Toss in your cauliflower florets and add 2 cups of the chicken broth (or water if you don’t have broth handy). Add a pinch of salt, cover the pot, and let it cook on medium-high for about 5-7 minutes.
  6. Add the remaining veggies
    Now, stir in the carrots, mint, and grated ginger. Cook for another 3-4 minutes until the carrots soften. You can add more broth or water here if the soup is looking a bit dry.
  7. Blend it up
    Grab your immersion blender (or regular blender if you don’t have one) and blend the soup halfway. You want it to be thickened but still have some chunky bits for texture. This is where the magic happens!
  8. Add the chicken
    Stir in your shredded chicken, and add a bit more chicken broth, salt, and pepper to taste. Let everything simmer together for another 5-6 minutes, letting the flavors meld. If you want a richer finish, drizzle in a tablespoon of olive oil.

  5. Add shredded chicken, more broth, and cook for 5-6 minutes to combine the flavors.
  6. Add a final drizzle of olive oil and serve hot!
