This creamy yogurt cake is made with just three simple ingredients: Greek yogurt, eggs, and cornstarch. With a soft and creamy texture, it’s a healthier alternative to traditional cakes and requires no butter, oil, or flour. It’s quick to prepare, taking just about 5 minutes to make the batter. You can bake it in the oven or cook it in an air fryer for a delicious, low-calorie dessert or snack.

Ingredients:
- 1 2/3 cups (400g) nonfat vanilla Greek yogurt (sweetened)
- 4 large eggs
- 4 tbsp (32g) cornstarch
How to Make the Yogurt Cake:
- Prepare the Pan:
- Spray a 6-inch round cake pan with cooking spray and line the pan with parchment paper that comes up slightly above the sides of the pan. Don’t worry if the paper wrinkles—this gives the cake a rustic look.
- Make the Batter:
- In a large bowl, whisk together the yogurt and eggs until smooth and the eggs are fully incorporated. If you prefer a sweeter cake, you can add sugar at this stage (more details in the notes section below).
- Gradually add the cornstarch and whisk until the batter is smooth and lump-free.
- Cook the Cake:
- Pour the batter into the prepared pan.
- Preheat the air fryer to 320°F (160°C). Bake for about 20-23 minutes. The cake should puff up, the surface will caramelize, and it should no longer be jiggly.
- Preheat your oven to 350°F (177°C). Bake for about 70-75 minutes. The cake will puff up and become golden brown. Once it cools, the surface may wrinkle a bit.
- Cool and Serve:
- Allow the cake to cool for about 30 minutes at room temperature, then transfer it to the fridge for at least 2 hours (or overnight for best flavor).
- Before serving, let the cake sit at room temperature for 15-30 minutes.
- Optionally, drizzle with honey or your favorite sweetener for added sweetness.
Notes:
- This cake is naturally low in sweetness. If you prefer a sweeter cake, you can add about 1/4 cup of sugar to the batter (or up to 1/2 cup if using plain yogurt). You can also drizzle honey on top when serving.
- You can use either a 6-inch round cake pan or a 6-inch round springform pan for this recipe.
- The air fryer method creates a cake with a beautifully caramelized surface, while the oven version may have a slightly moister texture but will deflate more.
