🐟 The “Emergency Fish” Recipe

This is what I like to call an Emergency Fish Recipe.

Why? Because it’s one of the easiest fish dinners you can make when time is short and energy is low.

In just a few minutes, you’ll have:

  • perfectly juicy and flaky fish
  • a crispy golden parmesan crust
  • a healthy homemade meal
  • dinner ready in under 10 minutes

And the best part? No oily stove mess.

🧄 Ingredients

For the Fish

  • 2 firm white fish fillets (about 5 oz / 150 g each)
(perch, cod, tilapia, halibut, haddock, etc.)
  • 2 tbsp Dijon mustard (or mayonnaise)
  • salt and pepper
  • olive oil spray

For the Parmesan Crumb

  • ½ cup panko breadcrumbs
  • ⅓ cup finely grated parmesan cheese
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, finely chopped (optional)
  • pinch of salt

👨‍🍳 How to Make Parmesan Crusted Fish

1. Preheat the Broiler

Preheat your grill/broiler on high.

2. Prepare the Crumb Mixture

In a bowl, combine:

  • panko breadcrumbs
  • parmesan cheese
  • garlic
  • olive oil
  • parsley
  • salt

Mix well until everything is evenly combined.

3. Season the Fish

Sprinkle both sides of the fish fillets with salt and pepper.

Spread Dijon mustard on the top side only.

The mustard works as a “glue” to hold the breadcrumb coating in place while adding extra flavor.

4. Coat the Fish

Press the mustard side of the fish firmly into the crumb mixture.

Press gently so the crumbs stick well.

Lightly spray the coating with olive oil spray to help it become extra crispy.

5. Cook the Fish

Heat ½ tablespoon olive oil in a skillet over high heat.

Once the skillet is hot:

  1. Place the fish in the pan.
  2. Transfer the skillet under the broiler.

Cook for 5–6 minutes, until:

  • the crumb topping is golden
  • the fish flakes easily in the center.

🔥 Oven Method (Alternative)

If you prefer using the oven:

  1. Bake the fish at 390°F / 220°C for 10–12 minutes.
  2. Turn on the broiler for the final minute to make the crumb topping golden.

🍽 What to Serve with Parmesan Crusted Fish

This fish pairs beautifully with simple sides like:

  • Creamy mashed cauliflower
  • Garlic sautéed spinach
  • White bean mash
  • Fresh green salad
  • Crusty bread with olive oil

For a super quick meal, serve with toasted bread and a simple lemon-dressed salad.

Dinner ready in minutes!

🧑‍🍳 Tips for the Best Results

✔ Use firm white fish fillets so they hold their shape.
✔ Fillets around 2 cm (¾ inch) thick cook best under the broiler.
✔ Spray the crumbs lightly with oil to help them turn golden and crispy.
✔ Don’t overcook the fish — it should flake easily but stay juicy.

🐟 Best Fish for This Recipe

You can use almost any firm white fish, including:

  • cod
  • tilapia
  • halibut
  • haddock
  • perch
  • snapper

Just avoid very delicate fish that might fall apart.

🍋 Serving Tip

Always serve this fish with fresh lemon wedges.

A squeeze of lemon brightens the flavors and makes the crispy parmesan crust even more delicious.
