10-Minute Air Fryer Chicken Sausage and Veggies

This quick and easy air fryer chicken sausage and veggies recipe is the perfect lazy-day meal! Loaded with protein and colorful vegetables, it comes together in just 10 minutes and is great for lunch or dinner any day of the week. Pair it with cauliflower rice, brown rice, or enjoy it as is for a wholesome, healthy meal.

Ingredients

  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large orange bell pepper, cut into 1-inch pieces
  • 1 red onion, peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces
  • 1 tbsp avocado oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • ½ tsp kosher salt
  • Pinch of black pepper
  • 1 package (12 oz) chicken sausage, sliced into ¾-inch rounds

Instructions

  1. Prep the veggies: Place chopped peppers, onion, and zucchini in a large bowl. Drizzle with avocado oil and toss to coat.
  2. Season: In a small bowl, mix garlic powder, onion powder, Italian seasoning, salt, and pepper. Sprinkle over the veggies and toss until evenly coated.
  3. Add the sausage: Slice chicken sausage into ¾-inch rounds and add to the veggie mixture. Toss to combine.
  4. Air fry: Preheat the air fryer to 390°F and lightly spray the basket with cooking spray. Add the sausage and veggies in a single layer. Cook for 10 minutes, shaking or flipping halfway through. Cook in batches if needed.
  5. Serve: Remove from the air fryer and serve warm as is, or with cauliflower rice, brown rice, or your favorite sauce.

Tips & Notes

  • Use good-quality chicken sausage for the best flavor; kielbasa also works well.
  • Chop veggies into even 1-inch pieces to ensure they cook evenly.
  • For a lighter version, spray the veggies with oil instead of using a tablespoon.
  • This recipe is gluten-free, paleo-friendly, and Whole30-compliant.

Storage & Reheating

  • Store: In an airtight container in the refrigerator for up to 4 days.
  • Reheat: Microwave or warm in the air fryer at 350°F until heated through.
