Ingredients:

For the Muffins:

  • 1 cup dark brown sugar 🍂
  • 1 cup white sugar 🍬
  • 2/3 cup vegetable or canola oil 🛢️
  • 1/2 cup unsweetened applesauce 🍏
  • 3 eggs 🥚
  • 15 oz can pure pumpkin 🎃
  • 1 tsp vanilla extract 🍨
  • 5 tsp pumpkin pie spice 🍁
  • 1 tsp ground cinnamon 🍂
  • 1/2 tsp ground cloves 🍂
  • 3 cups all-purpose flour 🌾
  • 2 tsp baking soda 🥄
  • 1 tsp baking powder 🧂
  • 1 tsp salt 🧂
  • 1/2-1 cup cinnamon chips 🍫

For the Pecan Streusel:

  • 3/4 cup pecans, divided 🌰
  • 1/2 cup dark brown sugar 🍂
  • 6 tbsp flour 🌾
  • 1/2 tsp ground cinnamon 🍂
  • 4 tbsp cold butter 🧈

Instructions:

1️⃣ Preheat Oven: Set the oven to 400°F (200°C) and grease or line your muffin tin. 🧁

2️⃣ Mix Wet Ingredients: In a large bowl, beat together dark brown sugar 🍂, white sugar 🍬, oil 🛢️, and applesauce 🍏 until smooth.

3️⃣ Add Eggs & Pumpkin: Beat in eggs 🥚 one at a time, then mix in the pumpkin 🎃 and vanilla 🍨 until fully combined.

4️⃣ Add Spices: Stir in pumpkin pie spice 🍁, cinnamon 🍂, and ground cloves 🍂 for a warm, spiced flavor.

5️⃣ Prepare Dry Ingredients: In a separate bowl, whisk together flour 🌾, baking soda 🥄, baking powder 🧂, and salt 🧂.

6️⃣ Combine & Add Cinnamon Chips: Gradually mix the dry ingredients into the wet mixture until just combined. Fold in cinnamon chips 🍫.

7️⃣ Make the Streusel: In a food processor, combine pecans 🌰 (save some for topping), brown sugar 🍂, flour 🌾, and cinnamon 🍂. Add cold butter 🧈 and pulse until crumbly.

8️⃣ Assemble the Muffins: Fill each muffin tin 2/3 full with batter. Sprinkle the pecan streusel on top and add extra chopped pecans if you like.

9️⃣ Bake: Bake at 400°F (200°C) for 5 minutes, then lower the temperature to 350°F (175°C) and bake for an additional 20 minutes, or until a toothpick comes out clean.
