Cheesy Beef Burrito Bowl

This Cheesy Beef Burrito Bowl is everything you love about a loaded burrito—just without the tortilla! It’s layered with fluffy cilantro rice, zesty seasoned beef, fresh pico de gallo, creamy guacamole, and all the cheese your heart desires. A satisfying, customizable meal that’s perfect for busy weeknights or meal prep.

Ingredients

  • 1 cup white rice
  • Kosher salt, to taste
  • 1 tsp. extra-virgin olive oil
  • 1 lb. ground beef
  • 1 Tbsp. chili seasoning
  • Freshly ground black pepper, to taste
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup freshly chopped cilantro
  • 1 cup pico de gallo
  • 1 cup guacamole
  • 8 oz. shredded cheddar cheese
  • Handful of tortilla chips, lightly crushed
  • 1 cup sour cream

Instructions

Step 1: Cook the Rice
In a small pot, cook the rice according to package directions with 1/2 teaspoon of salt. Once tender, fluff with a fork and keep warm.

Step 2: Prepare the Beef
In a large cast-iron skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon. Spoon out and discard any excess grease. Stir in the chili seasoning, salt, and black pepper. Mix in the Monterey Jack cheese until melted and combined.

Step 3: Add Fresh Flavor
Right before assembling, stir the chopped cilantro into the warm rice for a burst of freshness.

Step 4: Build Your Burrito Bowl
In each bowl, layer a generous scoop of cilantro rice, cheesy beef, pico de gallo, guacamole, and shredded cheddar. Sprinkle crushed tortilla chips over the top for crunch, then finish with a dollop of sour cream. Serve immediately and enjoy every bite!
